Sweet Potato Patties for Paleo Eggs Benedict

  • 1 large sweet potato
  • 3 Green Onions
  • ½ cup of Almond Flour
  • ¼ teaspoon Pepper
  • ½ teaspoon Himalayan or Sea Salt
  • 3 Egg Whites + 1 Egg
  • 1 Tablespoon Coconut Oil or Avocado Oil (like this)
  • Extra oil for frying
  1. Peel and grate the Sweet Potato
  2. Slice the green onions.
  3. Place the grated sweet potato, green onion, egg whites, egg, almond flour, salt, pepper and oil into a bowl and mix.
  4. Turn the stove on medium high.
  5. Place some oil in a large pan.
  6. Spoon the sweet potato mixture into a large pan and form 4 patties.
  7. Depending on the size of your pan, you may have to make this in two batches.
  8. Cook for about 7 minutes.
  9. Carefully turn them over and cook the other side for around 7 minutes. Be very careful and gentle in handling the patties as they won't be binded very strongly until fully cooked.
  10. Remove from the heat.
  11. Place on a plate and cover with a paper towel to keep them warm.
  12. To save time in the future, you can make extra and freeze them.
