Paleo Eggs Benedict

Ingredients
  • ½ cup Hollandaise Sauce (See recipe below)
  • 4 Sweet Potato Patties (See recipe below)
  • 5 Pastured Eggs
  • 4 Pieces of Canadian Bacon
Instructions
  1. Prepare the Sweet Potato Patties. Cover them so they stay warm. (See recipe below).
  2. Prepare the Hollandaise Sauce. Place in a glass container in a bowl of hot water to keep warm. (See recipe below).
  3. Cook the Canadian Bacon until slightly crispy.
  4. Cook the four eggs sunnyside up.
  5. Begin assembling the Paleo Eggs Benedict.
  6. Place one Sweet Potato Patty on each plate. On top of that, place a piece of Canadian Bacon, on top of that place a sunnyside up egg, and pour Hollandaise sauce over the top.
  7. Serve and enjoy!
