Fermented Cauliflower with Turmeric

This fermented cauliflower makes a nice side dish. This contains turmeric and is an easy way to get both more turmeric and fermented foods into your diet.
  • 3 cups of Organic Cauliflower
  • ¼ cup Turmeric, peeled and finely chopped
  • 1 teaspoon Peppercorns
  • Use either:
  • 2 Tablespoons Sea or Himalayan Salt
  • ¼ cup whey (click here to learn how to make it) plus 1 Tablespoon Sea or Himalayan Salt
  • Filtered or Spring Water
  • 1 - 32 ounce Mason Jar
  • Use one of the following:
  • A few large pieces of Organic Cucumber
  • a cleaned, sterilized river stone
  • a fermentation weight (like this)
  1. Clean the cauliflower and break into small to medium sized pieces.
  2. Peel the turmeric and finely chop it.
  3. Dissolve the salt in a small amount of water.
  4. Add the cauliflower, turmeric, salt water, spices, and whey (if you are using it) to the jar.
  5. Pack everything in tightly, leaving a couple of inches at the top.
  6. Add water, leaving a couple of inches of space at the top.
  7. Everything needs to be submerged under the water.
  8. If using cucumber, put a couple of large chunks into the top to push everything down.
  9. If you are using a river stone or fermentation weight, place that in the top so everything is pushed down and submerged.
  10. Put the top on the jar.
  11. Only screw the top on halfway and it will expand when it begins to ferment and could explode if put on too tight. This has never happened to me but store it in a safe place to be sure.
  12. Put a plate under the jar in case liquid leaks out of the top.
  13. It will take about a week to ferment.
  14. You can check it by putting the jar over the sink and carefully opening it.
  15. You'll know it is done when the liquid is bubbly and fizzy and the cauliflower has a nice turmericy flavor.
  16. Take out the cucumber if you used that.
  17. If you used the stone or the weight, take that out and clean it.
  18. Place the jar in the refrigerator.
  19. These will last up to 6 months.
