This is a light, refreshing meal, perfect served with a bottle of organic white wine or sparkling mineral water and asparagus.
  • 1 pound Wild Halibut (I don't think any Halibut is farm-raised as this writing but double check as farm-raised fish are very unhealthy)
  • 3 tablespoons Grass-Fed Butter (like this)
  • 1½ tablespoons Tapioca Starch (like this) or Arrowroot (like this)
  • 1¼ cups of Vegetable Broth
  • 2 tablespoons fresh Dill, chopped
  • 2 tablespoons Lemon Juice
  • ½ teaspoon Sea Salt or Himalayan Salt
  • ¼ teaspoon Black Pepper
  • 1 teaspoon Mustard
  • Extra dill for garnish
  1. Preheat the oven to 375 degrees Farenheit.
  2. Place a small amount of salt and pepper on the Halibut.
  3. Bake for 15 minutes.
  4. Melt butter in a pan.
  5. Add tapioca starch, mustard, salt and pepper.
  6. Bring to a boil.
  7. Stir constantly for a few minutes until the sauce thickens.
  8. Add the dill at the end.
  9. Place the Halibut on dinner plates.
  10. Pour the sauce over the Halibut.
  11. Garnish with dill springs and serve.
  12. Enjoy!
