Cream of Carrot Soup with Dill (Paleo, Vegan Option)

This cream of carrot with dill soup is simple, comforting and dairy-free.
  • 6 Carrots
  • ½ of a Yellow Onion
  • 1 Tablespoon Dill, dried
  • 2 cups Chicken Broth, Vegetable Broth or Bone Broth (use Vegetable broth if you want a vegan/vegetarian option)
  • 1 cup Coconut Milk
  • 1 cup Filtered or Spring Water
  • 1 teaspoon Himalayan or sea salt
  • ½ teaspoon Black Pepper
  1. Peel and chop the carrots and onion
  2. Place in a pan with the water
  3. Steam for 35 minutes, adding more water as necessary.
  4. Add the chicken broth, dill salt and pepper.
  5. Steam for an additonal 10 minutes.
  6. Place everything in a Vitamix or blender.
  7. Blend until smooth.
  8. Garnish with a little extra dill.
  9. Enjoy!
