Goji Berry Benefits and Recipe (Paleo, Vegan)

This superfood goji berry raw cacao parfait is creamy, delicious and packed with nutrients and all the goji berry benefits for your health.
  • ¼ cup of Goji Berry Powder (like this)
  • 1 can of full fat Coconut Milk or Coconut Cream
  • 2 tablespoons Birch Xylitol (like this) or Raw Honey
  • ¼ cup Cacao Nibs (like this)
  • 2 Tablespoons of Goji Berries
  1. If you are using full fat canned coconut milk, place it in the refrigerator for at least 2 hours.
  2. If you are using canned coconut cream, you don't have to refrigerate it.
  3. Open the can of coconut milk or coconut cream.
  4. Spoon out the solid portion and place into a mixing bowl.
  5. Discard the liquid.
  6. Add the honey or xylitol.
  7. Beat with an electric mixer for a few minutes until the coconut resembles whipped cream.
  8. Divide the coconut cream up between 4 small 4 ounce dessert dishes.
  9. Add a layer of cacao nibs in the middle and cover with coconut cream.
  10. The coconut cream is very rich so you will want to use very small dishes.
  11. Place 1 tablespoons of goji berries and 1 tablespoon of cacao nibs on top right before you serve it. (Do not put the goji berries on too soon as they will get mushy.)
  12. Serve and enjoy all the goji berry benefits in good health!
